Kappamaki - [Yokai | Foodlore] - かっぱ巻き
• About: Kappamaki are plain cucumber rolls: a simplistic, but delicious type of Norimaki roll, wrapped in seaweed with a refreshing, raw, sliced cucumber at its core. - They're usually served along side sushi as a sort of palette cleanser, today you'll find them on menus world-wide! - Although its difficult to say exactly when they where first created or named; - it most likely that they came to be named as such because the folkloric kappa would most certainly enjoy it! - After all, cucumbers are said to be their favourites! - Legend has it; if you want to go swimming in a river or a lake; to be extra safe, you should first carve your family's name into a cucumber and toss it into the water as an offering, the kappa will eat it instead and wont bother you!
