Kihada Maguro – Yellowfin Tuna – キハダ – [Sushi/Foodlore]

β€’ About this fish: Not to be confused with the similarly named “Yellow Tail” (see: “Hamachi.“) Or with the other (smaller) long finned tuna, known as the “Albacore” (See “Bincho-maguro“) Nor with its similar looking cousin the “Big Eye Tuna” (see “Mebachi-Maguro“) Yellowfin Tuna, as their name suggests are named for their distinctive lengthy yellow rear dorsal fins as well as well as its bright Yellow “Fin-lets” (Both which lengthen with age!) as well as distinctive yellow ‘racing stripe’ along their side. Known for their speed, they are often likened to ‘living torpedoes’ zipping through the waves! They are able to reach speeds of over 75 mph and are among the fastest fish in the ocean! They thrive in tropical environments and spend most of their time at sea level eating up other fish. Their meat is the most lean of the tuna, (the entire body isΒ  firm, red meat (akami) this level of toneness is a good testimate to how much its been working out! πŸ’ͺ This fish is so firm that it lacks a ‘Toro’ (belly) cut completely!) – Kihada is most popular in the Kansai region & Osaka, if you visit in the summer or autumn and dine out for sushi, you’ll likely be served this before the other types!
