Aoyagi – Bakagai – [Sushi/foodlore]

Bakagai – (Round clam) aka: “Aoyagi”, “Fools clam”, “Idiot calm” – [Sushi/Foodlore]

• About this clam:  “Bakagai” as its more formally known as “Aoyagi” is also known as the “fools clam” or more literally called the “idiot”(baka!)clam” often said to be called as such because its shell is always slightly agape (Unlike other clams, the sides dont match so they cannot close perfectly shut!)  As it moves around it sticks its leg (adductor muscle) out of its shell, the appearance of which brings to mind an idiots lolling tongue. “🤪” others say that its called that because it was once caught in “stupid amounts” – Its also often said that ‘Bakagai’ could be accidentally misheard as an insult, (probably by drunk customers.) So, sushi restaurants & bars instead adopted the name “Aoyagi” (After the fishing village where they where once caught, Aoyagi was once where Ichihara city, Chiba prefecture is today!) anyways, Its another surf clam ( like Torigai and Hokkigai) as such; its crisp, bright orange foot is usually served freshly boiled on the spot by the chef,  it sticks “up” off the rice as if its blowing a raspberry at you!
