Aoyagi – Bakagai – [Sushi/foodlore]

Bakagai – (Round clam) aka: “Aoyagi”, “Fools clam”, “Idiot calm” – [Sushi/Foodlore]

• About this clam:  “Bakagai” as its more formally known as “Aoyagi” is also known as the “fools clam” or more literally called the “idiot”(baka!)clam” because its shell is always slightly agape (Unlike other clams, the sides dont match so they cannot close perfectly shut!) As it moves around it sticks its leg (adductor muscle) out of its shell, the appearance of which brings to mind an idiots lolling tongue. “🤪” – Its often said that ‘Bakagai’ could be accidentally misheard as an insult, (probably by drunk customers.) So, sushi restaurants & bars instead adopted the name “Aoyagi” (After an old fishing village which today is Ichihara city, Chiba prefecture!) anyways, Its another surf clam (like Torigai and Hokkigai) as such; its crisp, bright orange foot is usually served freshly boiled on the spot by the chef,  it sticks up off the rice as if its blowing a raspberry at you!
