Tsubugai – 螺貝 – (Whelk, “Bai-Gai”)
• About this Sushi: The ‘Escargot’ of the sea! Most sea snails are served alongside their shells for bonus points in presentation! Whelk are deceptively flavourful with sweet and bitter hints! they are considered especially lucky to eat around new years time and are often enjoyed as an ingredient in “Osechi” (New Years Tiered Bento boxes!) Tsubugai are also sometimes known as “double clams” (“Bai-gai”, “Bai” meaning ‘twice’) So; they’re twice as lucky as clams are! it’s said that eating these for new years, will ’double your luck’ for the upcoming year!
