Tekka Maki – 鉄火巻 – (aka: Tuna Roll, Nori maki)

• About this roll: Generally speaking, Maki rolls are thought to have made their earliest appearance in the late Edo period; The name is derived specifically from ‘Tekkama’ a slang word used to describe the color of gambling houses (tekkaba) found in the red-light districts. Supposedly the rolls where specifically invented for players to enjoy eating with one hand as a snack while they played their card matches! – (Overall; it sounds quite similar to the origin for Sandwiches!) – They come in all flavours, but the most iconic ones you see everywhere are usually filled with red tuna. (Typically a diced “Chutoro.”) – Incidentally; Thinner maki (usually with a single ingredient) are called “hosomaki”, Fatter maki with multiple ingredients are called “Futomaki” and the EXTRA large variety with 7 ingredients are called “Ehomaki ” (more about that one coming soon!)
