Rainbow roll – [Sushi/Foodlore] – Katakana:レインボー ロール.

• About this roll:  Another Uramaki roll (A modern, Japanese-North American fusion-sushi, likely created following the popularity of the California roll in the 1970s-1980s to appeal to tourists.) Rainbow rolls are named as such because the rolls typical ingredients are an assorted combination of ‘4+ colourful toppings’ generally; typically topped with a slice of Tuna, Salmon, White fish, Flounder (usually Hirame), Ebi, Eel & rarely sometimes even fruit! (such as pieces of Avacado & rarely, Mango!) or a mix match assortment of the above! (what exactly tops it will vary depending on the chef or what fish/fruit they have readily stocked!) The inner fillings usually match your typical California roll with a stick (or mash) of imitation crab, cucumber &/or Avacado as fillings inside & garnished with either sesame seeds or Tobiko (flying fish roe.)

In Japanese mythology; Rainbows or 虹(“niji”) are typically said to be bridges between heaven and earth (see also: “The Floating Bridge of Heaven”, “Ame-no-ukihashi“) – Narrated in both the Kojiki and the Nihon Shoki; the creator gods Izanagi and Izanami stood upon ‘a bridge of light’ when they gave form to the world! – In another Nihon Shoki story; these bridges are said to be guarded by a fierce diety named Sarutahiko Ōkami. (Whos ruddy red face, shining eyes & “7 hands long” nose greatly resembles a Tengus!)
