β’ About: A striped prawn known for its sweet-meaty flavor, and vibrant pinwheel like stripes; The name Kuruma means βwheelβ and was given to the shrimp because it turns a beautiful bright red, Its body bends into the shape of a wheel when boiled. in the old days when you where referring to “Ebi-sushi” this is the topping that came to mind! They are quite rare, so they’re considered a luxury dish, extremely expensive, in the US it can go for up to $130 per kilo!
