California Rolls – ‘カリフォルニアロール’ –
• About this roll: The prime example of an inside out “Uramaki roll” (prepared like a maki but inside out ’fluffy rice’ side out.) filled with Creamy Avocado, a thin slice of crispy cucumber and often “imitation crab.” (usually Alaskan Pollock.) – The roll is often coated on the outside with either with a layer of toasted sesame seeds or Tobiko Roe. Often said to be the example of an American roll, but Despite being named after California (Where avocados are produced en-masse.) Supposedly; this roll was invented in Vancouver BC Canada (My Hometown!) By official cultural ambassador; Chef Hidekazu Tojo, (who also famously invented the ‘BCroll’ among others.) he claims that he named it that to appeal to tourists from the states! (It seems to have worked, the recipe caught on & today the roll is served everywhere from LA to Tokyo!! It should also be said that Chef Tojo uses sesame seeds instead of tobiko roe & also uses actual dungeness crab instead of imitation crab-sticks! Today he calls it the “Tojo roll” at his restaurant! Given the quality ingredients he uses, his version is quite unique when compared to most of the other generic ‘Cali-Rolls’ out there! (I hope to visit Tojo’s soon and gift him a sticker! I’ll update this section when i do!)
